TAMPA, FL — South Tampa’s culinary landscape is about to gain a refined new addition. Bar Terroir, a French-inspired bistro and wine bar, is officially opening its doors on Thursday, June 5, 2025, at 3636 Henderson Boulevard. This latest concept comes from acclaimed chefs and restaurateurs Bryce Bonsack and Max McKee, the culinary minds behind Rocca and Streetlight Taco, both recognized by the Michelin Guide. Together, they aim to bring an elegant nod to French dining with a local twist.

A Tribute to French “Terroir”

The name Bar Terroir is rooted in the French term “terroir,” which refers to the unique influence of a region’s climate, soil, and traditions on its food and wine. This philosophy guides both the culinary offerings and the overall ambiance of the restaurant, offering an immersive Parisian bistro experience in the heart of Tampa.

An Intimate and Elegant Setting

Designed for an intimate dining experience, Bar Terroir seats just 38 guests. The interiors are outfitted with marble checkered floors, a rich wooden bar, and softly moody lighting—details that transport diners to a neighborhood café in France. It’s a space built for conversation, leisurely meals, and elevated tasting experiences.

Traditional French Cuisine by Chef Max McKee

At the helm of the kitchen is Chef Max McKee, formerly the executive sous chef at Rocca. His menu is a celebration of classic French bistro dishes, including beef bourguignon, French onion soup, steak frites, cassoulet, and escargot. House-made pâtés and a refined charcuterie selection round out the menu, reinforcing the restaurant’s dedication to authenticity and culinary heritage.

Curated Wine and Cocktails

Wine plays a central role at Bar Terroir. Led by Rocca’s wine director Brandon Boghosian, the curated wine list emphasizes French varietals, which comprise approximately 50–60% of the selection. A striking 1,500-bottle wine room serves both as a focal point of the space and a testament to the bistro’s commitment to quality and depth.

The cocktail program, overseen by general manager Kyle Burton, offers classic French-inspired drinks, including the French 75 and martini, executed with attention to detail and balance.

Hours and Hospitality

Bar Terroir will serve dinner five nights a week and is planning to introduce weekend brunch service. The restaurant will be closed on Tuesdays and Wednesdays but will notably remain open on Mondays, catering to those in the hospitality industry seeking a refined spot on their day off.
